Breakfast for lunch?
Yep.
Here’s the recipe:
In a skillet heat up a little chicken. (I used some from a rotisserie chicken)
Add spinach, chopped tomatoes, a little garlic, a little salt and sauté till spinach wilts.
Then add 2 eggs, mix in, cook till eggs are done.
Add some red pepper flakes if you want to up the heat.
And- done! Yummo!
With hypothyroidism I am not supposed to eat raw kale or spinach. Cooking it into foods I eat regularly provides my greens fix:)
